CAKE BAKING DAY




This was the day I baked my dark Christmas fruitcake. I soaked the fruit and nuts in 1/4 cup of brandy overnight.




Then I assembled all the remaining ingredients this morning.

After the measuring and mixing, I folded in the fruit and nut mixture.

I poured it into a greased and floured loaf pan (I only made 1/2 a recipe because I'm the only one who eats it --- and I could eat a whole fruitcake --- but I do maintain some sense of willpower in my refusal to eat all 5 lb of candied peel and ginger, glace cherries, currants, raisins, dates, pecans and walnuts!

I baked it at 275 deg for about 2 hours. What a glorious smell permeated the downstairs -- allspice, cloves & cinnamon. It smelled like Christmas!




I thought I'd just cut the end off to show you how dense and luscous the interior is; plus I wanted to be able to tell you with full assurance that my 2009 Christmas cake is absolutely delicious!

Oh my!
That cake look mighty fine! Do you let it rest before eating it? My dad soaks his in rhum and wraps it in cheese cloth, then in foil and leaves it for a good month...to age!

I'll be making some plum puddings next week....

It looks delicious...if it didn't have that candied fruit stuff in it. Can you tell I'm NOT a fruitcake lover? My hubby is though. And he would gladly eat the whole 5 lbs!! LOL

I love fruitcake and yours looks delicious. After it has cured, I love the fact that you can slice the thinnest slices for a little nibble now and then. Perfect with coffee.

I have never seen molasses in that kind of container...interesting.

Thank you fruitcake lovers and curious nay-sayers! Yes, I do let it age: when it cools, I wrap it in brandy soaked cheesecloth. Over the next month, I'll perhaps resoak the cheesecloth once or twice.

PS - I just found out yesterday that my Mexican student likes fruitcake! Egad! I may have to bake another one in order to get my necessary quota!

I usually don't bake fruit cake as I'd be the only one eating it too. Now that I've found you do it for yourself...maybe I'll do it too! Who knows, maybe one of my grandchildren will have inherited ther grand'ma's love of it! It does look wonderful!

Oh, I wish I could taste it. I love fruit cake and take a lot of grief for it, too!

Oh, oh, oh. That looks so dilicious, I imagine tasting it. Congratulations on your willpower. I would probably have stopped only after two or three slices "to taste".

Reminds me of my mother's baking...and how much I miss her during the month of Dec. Both of our birthdays first week of the month and then Christmas. Thanks for sharing!
