This is one of the pies I made for Canadian Thanksgiving dinner at my house which we held on Sunday Oct 11th. It's the first time I've ever made a pear pie. I heard someone talk about this kind of pie last week, so seeing as I love pears, candied ginger (with dark chocolate -- yum yum!!) and anything with lime, I looked up a recipe online and gave it a try.
The ingredient list included - 4-5 "firm" pears, 1/4 cup of finely chopped candied ginger, 1 cup white sugar, 1 Tbsp lime juice and the finely grated rind. Mix together, put the mixture into your pie shell, top with another shell and bake -- 450 deg for the first 10 min, then lower the heat to 350 deg for the last 40-50 min.
It smelled and looked wonderful! Here's my review of my pie.
The taste was divine -- a wonderful mixture of the pears and the candied ginger and just a hint of the lime. However, the pears were a little too "al dente" for me; and the pie was a little runny!
The pears I bought were called Red Emperor and they were firm; the lady at the farm market said that if they had give when I pressed them on either side, they were ripe. I think these were just a little under ripe. Next time, I'll buy my pears and let them ripen as I would at home to eat. Also, next time I'll add 1/4 cup of flour to help the juices thicken.
It was a great pie though; and I'd recommend it to anyone who loves these ingredients. Happy Fall Fruits Festival!

I went to a farmers market for the FIRST TIME EVER yesterday and bought some asian pears that were out of this world!
Kinda gives me a little hankerin' to make that pie. . .
Well your pie looks perfect and pretty. You always have to make something once to see what changes need to be made to the recipe. I have never made a pear pie. Sounds good! (Oh, my word for verification is hotty...yes I am, LOL!)

I have never made a pie which baked completely in the time and at the temperature the recipe called for-the recipe always has to be altered to suit my preferences. But I agree with PlantSomeRoots that you can't know what alterations to make until you try it once.
